Easy Chicken Basmati Soup with Bone Broth – for sick days

We all have experienced those days when someone you love is under the weather. Sore throat, congestion or fever – it’s that time of year and their body is fighting a battle for health. Everything in you wants to provide them with everything they need to get better.

Well in addition to rest, tea with lemon and honey, this soup is what you’ll need around until they’re back on their feet.

The problem is, I don’t like my vegetables, rice and chicken to get overly soggy, or else I would make big batches of soup in a slow cooker and keep in on warm all day for easy access to bowls of soup every few hours. It might be a good option for you.

Instead, I like my ingredients in a more firm texture when I serve a hot soup. So, I made up a huge batch of rice in the rice cooker. Meanwhile I cut up and browned a bunch of chicken breasts. Then pull out frozen chopped leeks and frozen peas. In a soup bowl, I sprinkled a few of the leeks and peas, followed by a few pieces of chicken hot off the pan, and a cup of hot rice. This was followed by a cup of boiling hot bone broth (via microwave or stove top). I use a soup spoon to stir it all together in the bowl, give it a few seconds for the ingredients to settle and serve.

After the first bowl, then I put together a number of ingredient batches for the rest of the day or two — a bit of leek, peas, handful of chicken, cup of rice – in little ziplocks in the fridge beside my mixing bowl full of bone broth. Then every time sweety emerged, I poured a ziplock into a bowl with a cup of broth, and zapped it in the microwave for two minutes. Super easy.

Ingredients

  • 1 cup basmati rice, cooked
  • 1/4 cup chicken cubed, cooked
  • 2 tablespoons peas
  • 1 tablespoon chopped leeks
  • 2 cups bone broth, boiling

Instructions

  1. Place leeks, peas, chicken and rice in a bowl.
  2. Pour boiling broth into bowl.
  3. Stir, and serve
